Week Twenty-Eight: soups and salads to eat

J – Tuesday: soup

  • 1 large sweet potato
    Spinach and sweet potato soup
  • Spinach
  • Homemade veggies stock paste
  • Garlic, onion
  • Olive oil
  • Ground pepper
  • 500 mL water

Me – Thursday: taco salad
  • Minced turkey sautéed in spices
  • Barley simmered in veggies stock
  • Lettuce
  • Cheddar cheese
  • Avocado

  • Jus drizzled over the top


J – Thursday:
  • Lettuce leaves
  • Carrots
  • Cucumber
  • Red capsicum
  • Chicken with mayo and herbs

  • Sliced iceberg lettuce

  • Lebanese cucumber

  • Homemade mayo with grapeseed oil

Tuesday: I didn't work until the afternoon so we did our own lunch.

J – Wednesday: I can't remember (forgive me, I'm sick) and there's no picture.

Me – Monday:

  • Camembert cheese chunks
  • Balsamic vinegar





J – Tuesday:

  • Baked sweet potato
  • Mixed lettuce leaves
  • Sliced mushrooms
  • Baby Roma tomatoes
  • Carrot
  • Cucumber
  • Coconut flakes







Me – Wednesday:

  • Bacon bits
  • Sautéed (after the bacon) leaks, onions and eggplants
  • Tinned corn kernels
  • Grated cheddar cheese
  • Balsamic vinegar and dukkah for flavour


J – Thursday:

  • Mixed lettuce leaves
  • Red capsicum
  • Baby Roma tomatoes
  • Carrot
  • Cucumber 
  • Snow peas
  • Celery
  • Fresh sage and parsley from the garden
  • Homemade dressing with olive oil, tomato paste and chilli
  • A bit of balsamic to serve

Week twenty-two: one excellent salad

J – Monday:

  • Sweet potato (steamed)
  • Potatoes (steamed)
  • Chopped omelette with bacon, cheese and tomatoes
  • Salad leaves
  • Carrots
  • NZ avocado 
  • Homemade mayonnaise for dressing


Tuesday: leftovers of yesterday's salad and dinner

Wednesday and Thursday: J had to fend for herself because I was on sick leave.

Friday: Worked straight through and had a smoothie from our local juice bar.

I probably won't be posting salads for the next two weeks, until the middle of March, because my mum is visiting. I'm planning lunches out at gluten free cafes, short work shifts so we can hang out and spending the weekends taking her to interesting places rather than blogging.

Me – Monday:
  • Roast potatoes (oven roasted with herbs)
  • Corn kernels (BBQed)

  • Splurt of caesar dressing and mayonnaise 

Tuesday: Lunch provided at work


J – Wednesday:
  • Mongolian lamb hotpot
  • Rice vermicelli cooked in homemade stock
  • Steamed zucchini
J says, 'This was last night's dinner, made for my son, who complimented it by saying it was "divine". I had to hide the leftovers to bring for R. I hope she equally enjoys it for lunch today.' 
R says, 'It was delicious!'


Both – Thursday:

  • R's chilli: diced tomatoes, carrots, onions, pepperoni slices, corn, four bean mix, green capsicum, spices
  • J's salad: mixed greens, mushrooms, red capsicum, tomatoes, marinated feta 


Friday: Leftover risotto from dinner out last night

J – Tuesday: (leftover red lamb curry)

Me – Wednesday:
  • Stir-fry mix (cabbage, carrots etc.) sautéed in coconut oil, chilli flakes and dried coriander
  • Carrots
  • Green capsicums
  • Corn kernels
    Wednesday's salad

J – Thursday:
  • Lettuce with garden herbs and slivered pesto almonds
  • Chicken in homemade curry mix and red chilli
  • Red capsicum
  • Baby Roma tomatoes
  • Cucumber
  • Fresh coriander 
  • Feta
  • Dash of oil from feta and red chilli sauce

Same thing on Friday for my lunch because I was away on Thursday.

Me – Monday:

  • Persian feta
  • Drizzle of flavoured oil from the feta

J – Tuesday:
  • Spinach and rocket
  • Cherry tomatoes
  • Cucumber and carrot peals
  • Mushrooms
  • Beetroot salad: shredded beetroot and feta
  • Fresh sage
  • Splash of balsamic dressing

Me – Wednesday:
  • Spinach
  • Avocado
  • Bree 
  • Dash of flavoured oil from the Persian feta
  • (I feel like I'm forgetting something; maybe J brought some salad too that day.)

Thursday: we went out for lunch with colleagues.
Friday: muesli, yogurt, berries and chopped plums in a jar (morning tea); crackers and peanut butter (lunch).
