Week sixteen: leftovers, curries and salads – oh my!

Me – Monday: (leftover green curry)

  • Green curry sauce (homemade – leave a comment if you want the recipe)
  • Rice noodles
  • Onions
    Tuesday's curry
  • Carrots
  • Red capsicums
  • Snap peas

J – Tuesday: (leftover red lamb curry)

  • Homemade curry powder
  • Ginger, garlic, onion, red chilli, lemongrass
  • Meat from leg of lamb
  • Rice vermicelli
  • Snow peas

Me – Wednesday:
  • Stir-fry mix (cabbage, carrots etc.) sautéed in coconut oil, chilli flakes and dried coriander
  • Carrots
  • Green capsicums
  • Corn kernels
    Wednesday's salad

J – Thursday:
  • Lettuce with garden herbs and slivered pesto almonds
  • Chicken in homemade curry mix and red chilli
  • Red capsicum
  • Baby Roma tomatoes
  • Cucumber
  • Fresh coriander 
  • Feta
  • Dash of oil from feta and red chilli sauce

Same thing on Friday for my lunch because I was away on Thursday.
