Week Eighteen: delightfully delicious (homemade) dressings

Monday – Happy Australia Day

Me – Tuesday:
  • Spinach
  • Green and red capsicum
  • Carrots
  • Sautéed sweet potatoes (in olive oil with salt and pepper and thyme)

J – Wednesday:
  • Spinach and rocket
  • Pesto covered almonds
  • Baked sweet potato with fresh herbs
  • Baby tomatoes
  • Cucumber
  • Green capsicum
  • Carrot slices
  • 1st attempt at homemade mayonnaise 

Me – Thursday:
  • Spinach and lettuce
  • Red capsicum
  • Carrots
  • Dried cranberry
  • Salted cashews
J – Friday:
  • Spinach and rocket
  • Pesto covered almonds
  • Baby tomatoes
  • Cucumber
  • Green capsicum
  • Carrot slices
  • Avocado
  • Tasty cheddar cheese
  • Homemade dressing

Week Seventeen: it's hot and the salads are cool

Me – Monday:

  • Sautéed prawns
  • Chopped nectarines 
  • Snow peas
  • Chopped portobello mushrooms 
  • Spring onions
  • Red and yellow baby tomatoes
  • Cucumber 


J – Tuesday:

  • Iceberg lettuce
  • Spinach
  • Red capsicum
  • Cucumber
  • Baby tomatoes
  • Snow peas
  • Feta cheese and its flavoured oil


Me – Wednesday:

  • Sautéed eggplant and zucchini
  • Green capsicum
  • Chopped portobello mushroom
  • Tinned chickpeas 
  • Vintage cheddar chunks 
  • Dukkah, splash of olive oil and balsamic vinegar













J – Thursday:

  • Mixed lettuce greens
  • Steamed green beans
  • Avocado
  • Baby tomatoes
  • Green capsicum
  • Snow peas
  • Grated parmesan 
  • Olive oil



Friday: leftovers at home after the morning at work

Week sixteen: leftovers, curries and salads – oh my!

Me – Monday: (leftover green curry)

  • Green curry sauce (homemade – leave a comment if you want the recipe)
  • Rice noodles
  • Onions
    Tuesday's curry
  • Carrots
  • Red capsicums
  • Snap peas

J – Tuesday: (leftover red lamb curry)

  • Homemade curry powder
  • Ginger, garlic, onion, red chilli, lemongrass
  • Meat from leg of lamb
  • Rice vermicelli
  • Snow peas

Me – Wednesday:
  • Stir-fry mix (cabbage, carrots etc.) sautéed in coconut oil, chilli flakes and dried coriander
  • Carrots
  • Green capsicums
  • Corn kernels
    Wednesday's salad

J – Thursday:
  • Lettuce with garden herbs and slivered pesto almonds
  • Chicken in homemade curry mix and red chilli
  • Red capsicum
  • Baby Roma tomatoes
  • Cucumber
  • Fresh coriander 
  • Feta
  • Dash of oil from feta and red chilli sauce

Same thing on Friday for my lunch because I was away on Thursday.

Week Fifteen: First week of 2015

Me – Monday:

  • Snow peas
  • Cucumber
  •  Red capsicum
  • Carrot
  • Mushroom
  • BBQed corn kernels
  • Diced parsley
  • Persian feta
  • Drizzle of flavoured oil from the feta

J – Tuesday:
  • Spinach and rocket
  • Cherry tomatoes
  • Cucumber and carrot peals
  • Mushrooms
  • Beetroot salad: shredded beetroot and feta
  • Fresh sage
  • Splash of balsamic dressing

Me – Wednesday:
  • Spinach
  • Avocado
  • Bree 
  • Dash of flavoured oil from the Persian feta
  • (I feel like I'm forgetting something; maybe J brought some salad too that day.)

Thursday: we went out for lunch with colleagues.
Friday: muesli, yogurt, berries and chopped plums in a jar (morning tea); crackers and peanut butter (lunch).
